In fact, if you were to line up several stroopwafels, from fresh off the press to ones that are five months old, you’d immediately notice the difference. The flavor and texture change over time, and not for the better.
Stale stroopwafels lose their buttery, cinnamon, caramel goodness—and the texture goes from crispy to hard and chewy. The longer they sit, the less you get to enjoy the true magic of a stroopwafel.

That’s because in the Netherlands, they write dates in the day/month/year format, while in the U.S., we use month/day/year. So, by the time those stroopwafels ship from overseas to your local store, they could be months old.
But overseas shipping isn’t the only issue. It’s also common for companies who stock high inventory to let stroopwafels sit for a long time on shelves.
So, freshness can quickly fade.
