Bianca’s Stroopwafel S’more Rice Krispies Recipe

Delicious, beautiful, and oh-so tasty, these stroopwafel s’more rice krispies bring your favorite trio of chocolate, marshmallows, and stroopwafels together on the classic crispy squares! 

These treats are a versatile crowd pleaser, a hit with kids, but also completely at home on a bridal or baby shower spread. 

Making the Most of Some Melted Stroopwafels 

When you own a stroopwafel business, stroopwafels are everywhere. I have them at work, at home, and usually tucked away in my purse. 

Unfortunately, I left two eight counts of our classic stroopwafels in the car. Under the hot sun, the car warmed up and the caramel center in the stroopwafels oozed into a gooey mess. 

My stroopwafels weren’t exactly beautiful after that, but I knew they’d be just as tasty. So, I went to the kitchen and assessed what we had in the pantry. 

We’re often using our stroopwafels as a base for s’mores, so marshmallows, chocolate, and my messy caramel cookies were already on hand. All I needed was Rice Krispies cereal and I had my ingredients! 

The Recipe 

This is an easy, no-bake recipe that comes together in 15 minutes. This recipe is adapted from Two Peas and Their Pod’s S’more Rice Crispy Treats, so be sure to check them out for other easy dessert ideas. 

Ingredients 

  • 6 Tablespoons Unsalted Butter 
    • 4 Cups Miniature Marshmallows, Divided: the most important thing with the marshmallows is to make sure they melt quickly. For that reason, we recommend using minis.
    • 7 Cups Crispy Rice Cereal - both the generic and the branded Rice Krispy Cereal are fine for this recipe! 
    • 1, 8 ct. Package of Stroopwafels Cut Into Small Squares: We always use stroopwafels instead of graham crackers for s’mores, so we knew we wanted stroopwafels in our s’more rice crispies! By using stroopwafels, we get to add cinnamon, brown sugar, and caramel cookie flavors. Those extra dimensions bring more warmth, and make the dessert even better with a cup of coffee or cocoa. 
    • 1 Cups Dark Chocolate Chips or Chunks (plus chocolate to add on top): Stroopwafels are sweet, so we balance that by choosing darker chocolate to cut some of the sweetness and add more depth of flavor. You're welcome to substitute this with your favorite chocolate! You’ll want dark chocolate chips to fold into the dessert, but can opt to cut pieces of your favorite chocolate bar to put on top. 

    Optional: Caramel Drizzle 

    Instructions 

    1. Remove your stroopwafels from the packaging. Cut them one at a time into thin strips vertically, then again horizontally until you have small stroopwafel chunks.

    2. Grease a 9x13” baking pan. Set it aside.

    3. In a large pot, melt unsalted butter over medium heat. Cook until brown, stirring occasionally to avoid burning.

    4.Add 2 cups of miniature marshmallows (mini or regular size). Stir in until the marshmallows melt completely. This will take longer the larger your marshmallows are.

    5. Remove the pan from heat.

    6. Add cereal and gently stir until the cereal is coated in melted marshmallows.

    7. Stir in remaining 2 cups of mini marshmallows and stroopwafel pieces. Then gently mix in your dark chocolate chips.

    8. Lay wax paper over the top of your dessert and lightly. press it down with your fingers to compress it in the 9x13” pan. You can also use a greased spatula.

    9. Press more dark chocolate chips or chunks and stroopwafel pieces into the top of the dessert.

    10. Let cool to room temperature before cutting into squares or rectangles and serving. 

    Tip: If you want to sweeten this treat further, add a caramel drizzle to the top before serving! 

    Do not put your rice krispies in the fridge. Instead, seal them in an airtight container to enjoy soft crispy treats for up to 3 days.  

    How We Enjoy Stroopwafel Krispies

    This recipe makes a delicious dessert, but we also love it with a bowl of berries. We picked lots of blueberries and strawberries this season and thought the fruit paired wonderfully with the rice krispies and a cup of tea!
