Almost every Thanksgiving dinner includes a pumpkin pie dessert. Fortunately, our customer Calla created a wonderful pumpkin pie using our stroopwafel crust, and we’re here to help you do the same.
This recipe is adapted from Modern Farmhouse Eats, so be sure to follow them for great recipe ideas.
Why Use No-Bake Stroopwafel Pie Crust?
You don’t have to flavor the crust - we’ve done it for you! Our No-Bake Stroopwafel pie crust contains brown sugar, cinnamon, and cookie flavors, plus a unique texture of ground stroopwafel cookies before the caramel is added.
It saves you time - you don’t need to bake this crust before adding the filling. In fact, you shouldn’t! This saves you at least 20 minutes in the kitchen and gives you an even more flavorful pie crust than graham crackers.
It’s available in Classic and Gluten Free - if you have loved ones with celiac disease, the Gluten Free stroopwafel pie crust is a way to give everyone at the table something to enjoy for dessert. We’ve made our Gluten Free pie crust taste every bit as good as the classic, so no one’s compromising!
Alright, here’s how to make Calla’s amazing dessert!
How To Make Pumpkin Pie with Stroopwafel Pie Crust
For the Crust
2 cups classic or Gluten-Free No-Bake Stroopwafel Pie Crust
6 tablespoons of melted, unsalted butter
- Mix 2 cups of No-Bake Stroopwafel Pie Crust with 6 tbsp of melted unsalted butter.
- Transfer to 9” pie pan and press the mixture down with the back of a spoon until firm.
- Add filling - you really don’t need to bake this crust before the adding the filling!
Pumpkin Pie Filling
If you want to make lightning quick pumpkin pie, use a store bought pumpkin pie filling and skip the rest of this section. There’s no shame, no mess, and you’ll still wow your family and friends with the extra flavor and texture the stroopwafel pie crust brings.
If you’re up for making your own pumpkin pie filling, gather these ingredients.
- 1 15-ounce pumpkin purée can
- 3/4 cup packed brown sugar (up to 1 cup to taste)
- 1 cup heavy whipping cream
- 1 tablespoon cornstarch
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
Assembly and Baking
- Get a medium or large sized mixing bowl and grab your mixing tool of choice (electric mixer, whisk, and standing mixer are all fine options).
- Combine all pie filling ingredients and mix until smooth.
- Pour the filling over your crust.
- Bake in the oven (preheated to 350 degrees on the low rack) for 50 minutes, or until the edges of the pie are fully baked but the senter still jiggles when shaken.
- Allow the pie to cool for 1-2 hours. It will continue to bake as it cools, firming up the center.
Optional – Add Whipped Cream
We all know pumpkin pie is best served with whipped cream topping, and Reddi Whip and Cool Whip are always an option. But, if you’re already in the kitchen and have some time while your pie bakes, we recommend making homemade whipped cream this year!
Making Homemade Whipped Cream
- 2 cups heavy whipping cream - cold is best
- ¼ cup powdered sugar - we prefer powdered sugar to granulated sugar. While you probably wouldn’t taste the grains of granulated sugar in small batches of whipped cream, it still happens, so we prefer to avoid the risk!
- ½ teaspoon Vanilla Extract *optional, but delicious* - you can increase the amount of vanilla extract to taste but we recommend starting with 1/2 teaspoon for a robust vanilla flavor that's not overwhelming.
Mix with an electric mixer until you can make medium peaks with the whipped cream. Avoid over mixing!

Can I Bake the No-Bake Stroopwafel Crust?
Yes. In fact, for pumpkin pie, you have to bake the crust once you add the filling. But you never need to pre-bake the crust, which saves you about 20 minutes during your prep time.
When baking pies with filling that doesn’t have to bake to set, you don’t need to bake the crust at all.
