Simple Stroopwafel Blueberry Pie

I love blueberries, and any berries, really. In the summer, I always enjoy berry picking with my daughters. This year, my daughter Leonie visited from the Netherlands. I was able to go blueberry and raspberry picking with her and my U.S.- based daughter Annelotte. 

We had a wonderful time out at the patch, and got to enjoy the fruit of our labor with a fresh, no-bake blueberry pie out on the back porch. 

How Long Does It Take To Make No Bake Blueberry Pie? 

This is another easy, fast recipe that’s wonderful for last minute occasions and planned events! 

Because you don’t need to bake our No Bake Stroopwafel Pie Crust, this really is as simple as whipping up the blueberry filling and letting the dessert cool. 

The cooking process only takes about 20 minutes, though it’s best served after being chilled for 1-2 hours. 

Adapted from Taste of Home’s Blueberry Pie Recipe, this dessert swaps graham cracker crust for No Bake Stroopwafel Pie Crust. 

Ingredients 

  • 2 Cups of No-Bake Gluten Free Stroopwafel Pie Crust 
  • 6 tbsp melted unsalted butter 
  • 3/4 cup sugar
  • 3 tablespoons cornstarch
  • 1/8 teaspoon salt
  • 1/4 cup water
  • 4 cups fresh blueberries, divided
  • Whipped cream

Instructions 

For the Crust 

Follow the instructions on the package (mix 2 cups of crust crumbs with 6 tbsp of melted unsalted butter) and pat it down with a spoon in your pan. For this recipe, we used a 9” round baking pan. 


Make sure you pack the crumbs down well so it’s easy to spread your cream cheese, sugar, and cool whip mixture over them later on. 

For the Filling 

  1. In a large saucepan, combine sugar, cornstarch and salt. Gradually add the water, stirring until smooth. 
  2. Stir in 2 cups of blueberries. 
  3. Bring to a boil; cook and stir until thickened, 1-2 minutes. Remove from heat; cool to room temperature.
  4. Gently stir remaining blueberries into cooled blueberry mixture. Spoon into crust. Refrigerate, covered, until chilled, 1-2 hours. Serve with whipped cream.

Lemon and blueberry flavors pair well together, so try adding lemon zest to your blueberry mix for an easy twist on this recipe! 

What Does No-Bake Stroopwafel Pie Crust Taste Like? 

No-bake stroopwafel pie crust tastes like stroopwafels without the caramel filling! That’s because it’s make from real stroopwafel cut-offs before the caramel is added. 

Because it contains stroopwafel ingredients, it’s pre-flavored with notes of butter, cinnamon, and cookie. 

Can I Make This Gluten Free? 

Yes! We have a gluten free version of the pie crust that’s equally delicious and time-saving! Just make sure you’re also using a gluten free corn starch for the blueberry filling. Cornstarch is naturally gluten free, but corn starch is made in more gluten free environments than others.
