Stroopwafel Banana Pudding Trifle

If you’ve never made a traditional banana pudding trifle, stop now, go pick up a box of vanilla wafers, and get to work. It’s a tried and true classic that I fantasize about. It’s fluffy, creamy, chilled perfection. Especially served with a cup of coffee to balance some of the sweetness.

The thing is, I’m actually not a huge fan of vanilla wafers (even though I like them in the pudding).  

So as I was thinking about classic banana pudding desserts, I started wondering: what would a banana pudding trifle be like if I swapped the classic wafers cookies for stroopwafels: brown sugar and cinnamon spiced wafer cookies with caramel in the center?

Here’s what I came up with. 

Ingredients 

  • 1 package Dutch Waffle Company No Bake Stroopwafel Pie Crust 

  • 6 tbsp unsalted butter 

  • 4-7 ripe bananas (to taste) 

  • 2 cups 2% cold milk 

  • 1 tsp vanilla extract 

  • 1 family size box of Jell-o Vanilla Pudding 

  • 1 14oz can sweetened condensed milk 

  • 1 8 oz package of cream cheese (room temperature) 

  • 1 regular size tub cool whip 

Instructions 

For the Base 

  1. Melt 6 tbsps of unsalted butter. Combine it with 2 cups of Dutch Waffle Company No Bake Stroopwafel Pie Crust. Mix. 

  2. Press the combined mixture into the bottom of the trifle pan with a spoon to create a layer of crust. 

  3. Save the rest of the crust for later. 

For the Pudding Layer 

  1. Add milk, vanilla pudding mix, vanilla extract, and sweetened condensed milk into a bowl. Mix well with a hand mixer. 

  2. Next, add in the room temperature cream cheese and mix again until smooth. 

  3. Fold in 1 cup of whipped cream. 

  4. Set aside 

For Layering 

  1. Chop bananas into small round slices. Chop stroopwafels as desired. 

  2. Put a layer of bananas on top of the stroopwafel crust. 

  3. Spread the whipped pudding mix over the bananas and spread with a spatula until even. 

  4. Top the pudding layer with the remaining crust crumbs. 

  5. Repeat as necessary. 

I like to top my final layer with stroopwafels I’ve cut into 8ths. They make a nice design that looks special with little effort. 

Special Additions 

This recipe would also be delicious with bits of chocolate and peanuts added in. Even a simple chocolate shaving garnish could be a way to dress up this already beautiful dessert even more!
