If you’ve ever tasted a stroopwafel fresh off the griddle, you know it’s a completely different experience from one that’s been sitting around for months. Line up a freshly made stroopwafel next to one that’s several months old, and the difference is immediate.
Over time, stroopwafels lose what makes them special. The buttery flavor fades, the cinnamon and caramel dull, and the texture shifts from crisp to hard and chewy. The longer they sit, the further they drift from what a stroopwafel is meant to be.
Fresh isn’t a nice-to-have—it’s everything.
Why So Many Stroopwafels Aren’t Actually Fresh
In the Netherlands, the best stroopwafels are served warm by street vendors and small bakeries. They’re made and eaten quickly. But in the U.S., most people encounter stroopwafels as pre-packaged products—either online or on store shelves.
That’s where freshness often gets lost.
Many stroopwafels sold here are shipped from overseas, which means they’re already months old before they even arrive. On top of that, date labeling can be confusing. A package marked 12/06/2024 from the Netherlands was actually baked in June, not December—because dates there follow a day/month/year format.
And overseas shipping isn’t the only issue. Brands that produce and store large quantities often leave stroopwafels sitting in warehouses or on shelves for long periods of time.
By the time they reach you, freshness has already faded.
Why We Keep Stock Low (On Purpose)
We do things differently.
At Dutch Waffle Company, we keep inventory intentionally low so our stroopwafels move quickly from the bakery to your door. That means fewer delays, less shelf time, and a much fresher product—closer to how stroopwafels are enjoyed in the Netherlands.
Selling out occasionally isn’t a flaw. It’s a sign that what you’re getting hasn’t been sitting around.
A Little Stroopwafel Truth
You may have heard that placing a stroopwafel over a hot cup of coffee is the “traditional” way to eat one. While it does make for a great photo and can soften the texture slightly, it doesn’t restore lost flavor.
A truly fresh stroopwafel doesn’t need fixing.
